What better way than to spend you’re day with a significant other or family than a nice picnic at the park.   You can’t go wrong with this delicious healthy whole-wheat pita bread sandwich, in your picnic basket.  This sandwich is fused with Nigerian spice and other spices that will be make your mouth water.  This healthy sandwich is something to die for, its heaven in your mouth.

  • Pita Bread
  • Cajun Seasoning
  • Bell Peppers
  • Simply Asia Sweet Ginger Garlic
  • Thai Spicy Mango
  • Honey
  • Heavy Whipping Cream
  • Chopped Spinach (½ cup)
  • 16oz Chicken Breast or more
  • BBQ Spice

Ingredients Plantains

  • Sprinkle Cajun Seasoning over plantains moderate amount

Ingredients Charred Bell Peppers

  • 3 bell peppers (yellow, green, red)
  • 2 teaspoon simply Asia sweet garlic ginger
  • 1 teaspoon Cajun Seasoning

Ingredients for Sauce 

  • ½ cup heavy whipping cream
  • 2 teaspoon Cajun seasoning
  • 1 tablespoon Thai Spicy Mango
  • 1 teaspoon Simply Asia Sweet Garlic Ginger
  • 1 teaspoon Honey

Ingredients for chicken

  • 1 tablespoon Cajun seasoning
  • 1 tablespoon BBQ Spice
  • 1 tablespoon Suya Spice


For Plantains

Step 1:

Slice them in oval ship and put the seasoning on it and grilled for about 10 minutes on high heat, I grilled them at 350 degrees. 

Step 2:

Take them off the grill but if its not done after 10 minutes, leave them on a little longer. 

Charred Bell peppers

Step 1:

Cut bell peppers in half and put them on the grilled till the start to turn dark, removed them from the grilled.  Let them cool down, then slice them and set them aside.

Step 2:

Get a pan and put about 1-2 teaspoon of olive oil and through your bell peppers and sautéed for about 2-4 minutes and take it off the heat source and set it aside. 


Step 1:

Heat up a pan, and add the heavy whipping cream a long with the other ingredients.  When it starts to bubble up on high heat, reduce the heat and stir for a while.  Let that slowing cook for about 5-10 minutes; don’t let it get thick, keep stirring it.  Once you get it to the level of thickness, you want it to be, take it off the heat source and you are now ready to eat. 


Step 1:

Sprinkle the seasons over the chicken, put a moderate amount over it, don’t over season the chicken.  Easiest way to baste the chicken is to put the ingredients in a Ziploc bag and put your chicken.  Shake it till the entire chicken is covered in the seasoning.  Now you are ready to put it on the grill or over. 

Step 2:

On the grill you want to cook it for 35 minutes.  In the oven you can preheat your oven between 350-375, and bake for 30 minutes, make sure you check the temperate of the chicken to make sure the internal temperature is at 165 degrees. 


Get half of the pita bread and stuff it with bell peppers, chicken (sliced half the chicken breast and fill in one bread), spinach, and plantains and then top it off with the sauce.
