Serving Size: 1, two to be exact but I am greed lol.
1 ripe plantain
6oz boneless chicken breast (thin sliced ½ inch)
2 tbsp simply Asia sweet ginger garlic seasoning
2 tbsp Cajun Seasoning
2 tbsp chopped parsley
3 tbsp olive oil
½ lemon juice
1 tbsp honey
1tbsp chicken seasoning
1 tsp Maggie
First marinate the chicken breast for about 10-15 at room temperature by mixing 1tbsp simply Asia, 1tbsp Cajun seasoning, 1 tbsp. chicken seasoning and 1tsp Maggie and a ¼ cup lemon juice, the other ¼ will be for the sauce. After 10-15 minutes you will heat up a saucepan preferably a cast iron skillet with 3 tbsp of oil. Make sure the pan is very hot before you put the chicken and make sure you open the door, because it will most likely be filled with smoke.
Put your chicken in the pan, you will be sautéing, that’s why there is not much oil in the pan. Cook each side for about 5-7minutes. Make sure the chicken is blackened to your liking not burnt ☺. Blackened is basically getting burnt and smoking flavor on your meat and it’s tender.
For the plantains cut them in oval shapes that’s how I like them but cut to whatever shape you desire, I say about ¼ inches thin or whatever size you want them to be. Seasoned them with a tbsp of Cajun seasoning, in a small bowl mix them with the seasoning. Heat up a nonstick pan with 2 tbsp olive oil, when its hot put the plantains in the pan, sauté till they are golden brown or how dark you want them to be and set them aside. It should take you no more than 7 minutes to cook them on high heat. Remember you have to keep checking them and turning them.
Heat up 1-2 tbsp of oil in a pan, when it’s hot, crack your egg open and put it in the pan. If you have a pan big enough you can make both eggs at once and sprinkle 1 tbsp of simply Asia seasoning on the eggs cook for about 2-3 minutes or less at medium heat when the yolk is firm or close to it take it out. Before when taking it out, you don’t want the yolk to break. I suggest if you have a flat metal spatula use it to scoop it up.
For the sauce put the lemon in a small pan and bring it to boil and then add the honey and ½ tsp of Cajun seasoning in the sauce. Set the heat on high for about a minute and then reduce it to low and let it cook for 3-4 minutes or when it starts to thicken up its done. Turn off the heat and take it off the heat source.
Styling your plate.
Get a plate, put the plantains first, then the chicken, then the sunny side eggs and then drizzle the sauce over it and sprinkle some chopped up parsley over the eggs and you are done. The picture gives my explanations more justice.
